Should we abide by manufacturer-specified tyre speed ratings?

My local tyre dealer says that we don't need to fit higher than a T82-rated tyre to our average family cars (Astra hatchback 1.4, Primera hatchback 1.8 and Rover 200 1.4) as long as we don't go above the 118mph speed rating, yet the manufacturers appear to give a H88-rated recommendation which he says would be a waste of our money. Can you add anything to this?

You have to fit whatever the manufacturer fits as standard otherwise you will be uninsured.
