If the groaning sound only occurs when parking, it would be worth investigating if the sound happens when the electronic parking brake is applied or released, as this could be the explanation for the sound. It is not untypical for automatic parking brakes to create this sound as the vehicle moves slightly against the resistant of the brakes before the pressure is released, and if this is the case then it is nothing to be concerned about. Some owners have found that replacing the brake pads with latter specification items and ensuring the back of the pads are properly lubricated as reduced or stopped the noise. However, if you are experiencing this noise at other times then it could indicate a problem with the brakes or the suspension and in this case we would suggest having the vehicle inspected by a dealer or independent Volvo specialist.

As for the sensitive throttle at low speeds, assuming your XC40 is fitted with an eight-speed Aisin transmission rather than the seven-speed dual-clutch automatic, you should find that there is a small amount of 'creep' when you release the footbrake and the car is in gear, which allows controlled low-speed manoeuvres. However, some dual-clutch automatics do have a small degree of lag when accelerating and unfortunately it is a matter of using measured inputs and adapting your driving style to smooth out acceleration.
