How can I prove to a court that I have valid insurance?

I recently bought a car and transferred my insurance policy from my old car to my new one; the insurance broker told me it would show on the system immediately, but I was pulled three days later and had my car impounded.

I produced my documents to prove I was insured and they released my car but now the authorities are trying to take me to court to give me a £300 fine and six penalty points. What should I do?

If you did have insurance and can prove it then you are in the clear. The MID is very good, but not perfect and the prosecutors should not rely on it 100%.
