Buying new mondeo - which engine is best?

Is the Ford 1.6 Ecoboost engine sufficient for powering the Mondeo and would you recommend the optional 16-inch wheels?

It's fine. And the 16-inch wheels with, I think, 205/55 R16 tyres will give a better ride than bigger wheels with lower profile tyres.
