I was asked to email proof of insurance in advance of vehicle collection - is this usual practice?

I assume it is for registration and road tax purposes.

Do I send certificate section only, or full schedule that has address and occupation details etc?

The dealer needs to show proof of insurance to tax the vehicle. Previously I have always provided a copy of the insurance certificate to the dealer, and received the certificate back when picking up the car. Not sure whether e-mail proof will be sufficient.

Collected a new car yesterday from local dealer. He had asked for either the original or a copy of the ins. certificate only. As I gave him a copy I didn't ask for it back but beyond that there was no problem. Lots of dealers offer 7 days free cover to ease the registration procedure. They do it in order to provide you with a 12 month quote which they hope you'll accept. Obviously a percentage do.

I've emailed certificates to dealers before when buying new, no problem.

Last time I bought a new car, the insurance broker was given the dealer's number and they sorted it out between them. Worked fine.
