The engine management light recently came, took it to the garage who said the engine was not reach the correct temperature and the particle filter was getting blocked. They said I needed a new stat which they fitted. Prior to this the temp was showing between 80 and 85, since fitting the new stat and despite doing some long journeys the temp does not get off 0 unless standing in traffic but as soon as I start moving it drops to 0 again, anyone get any ideas please

That suggests the sensor is not immersed so either low coolant or an airlock.

I can never fathom cooling systems. The MX5 burst a hose a couple of weeks ago. It was fixed temporarily but despite being filled up the top hose wasn't getting hot. The thermostat was changed when the main hoses were replaced a few days later, now it's fine.

Funny thing is, when I tested the old thermostat with a kettle full of boiling water it looked to be working OK.

Would that account for it getting near normal as soon as car is stopped?

Had similar problem with 1.9D 'lingo in Spring immediately after replacement of oil cooler. Was less than impressed with tech who kept trying to tell me it must be OK as fan was cutting in at textbook temp in workshop. Replacement stat at MY suggestion sorted it.

Sounds to me like new thermostat is duff or being by passed. That way any airflow over rad will lead to overcool situation though I'm surprised by that still ocurring in summer air temperatures.
