                        Hello, was wondering if a car loaded on a those transporter vans requires insurance, mot and/or road tax?

                         No, the car does not need any of those things.

                        While its on the transporter its a load. Once lowered onto the road its a car and will need insurance. It would be a kick below the belt if you go the trouble of transporting it then were found parked on the road with no insurance/tax/MoT. 
 
 
A slightly different insurance aspect is that you might want to check that the carrier has insurance to cover the value of the car as a load. So if the car (as a load) is damaged then its covered. I expect a reputable carrier would have such cover but I would want to know for sure.
