What's causing our Mazda 3's engine to surge when riding the clutch?

I'm writing this email as a frustrated new Mazda owner. Last October we purchased a Mazda 3 Venture petrol from EMG Mazda Cambridge. It has now done 2300 miles, and we have a problem where, if you ride the clutch mainly on a slope going forward or backwards, the engine revs up to 2000rpm for about four seconds then drops down to where it should be. This doesn't happen all the time, and you then invariably stall it. Also if you attempt to drive the car hard, like during overtaking (I'm talking foot to the floor) as you make the gearchange the engine revs up 1000rpm, which makes an awful gearchange. We would appreciate your views.

This is how many modern petrol engines are mapped to completely burn the fuel/air mixture introduced to them and keep down emissions. They don't rev freely as engines used to, and they do hold revs on upchanges. You simply have to short shift.
