How fast should I drive my Toyota Yaris on the motorway?

I have a Toyota Yaris 1.0-litre petrol. Could you tell me what is the best rpm to shift gear? Also is 50mph or 55mph the optimum on a motorway?

I was driving one of these over Christmas and I changed up at about 3000rpm. You can't drive at 50mph or 55mph on a motorway or you'll get stuffed by an HGV. 60mph is the minimum safe speed for cars on a motorway.
