I have been in talks about buying a car which was advertised as having full dealer service history. When I originally spoke to the guy on the phone he said it was due a service soon, fine. The service interval is supposed to be 12,500 miles, the last service was at 37,200 and the mileage is now over 54k, making it over 4000 miles past its due service. Would you consider the car to have a full service history?

In more words - once the 'due' service has been done then technically yes but by increasing the service interval by so much he's stretching the 'spirit' of it.

Words on paper, yes, "Full service history" could technically be construed to mean that the full history of services done are shown. Whether any due services have been missed is not part of the wording, so even when stated, always check.

No money has passed hands yet, but I think the wording is a little misleading. I am thinking that I will ask the seller to either have the vehicle serviced now, or adjust the price to cover the cost of a service if they want to complete the sale.

You don't give the age of the vehicle, but bear in mind any manufacturers warranty it would have had is now null and void. Not necessarily a problem, but something to haggle over.
You could argue the case if it were a few hundred over, or even a thousand, but not over 4k!

The car is a 2003 Mondeo, so is out of manufacturers warranty. Just trying to look around at what is accepted as full service history, Whatcar says:
Full service history - Before buying a used car, ask to see the car's service book. If this shows the car has been serviced on time and according to the manufacturer's instructions, your potential buy has a full service history.
But I wanted to see what people here thought. Thanks for your replies.

What is Full serivce history?
A record of all services and work done with receipts and invoices and reports etc.
Or
A book full of stamps(whether at the right time or not is another comment) ?
My answer is that a FULL history should have both. Just 1 on their own makes it a service record.

In all honesty I probably would have accepted either, but with the big gap I think it is cheeky to advertise the car as having FSH.
