Generally, how is this done? I imagine it's only a few bolts but I'm probably wrong. Car is a 306 (With a leak)

No, you're right. Usually just a few bolts. Had to remove the rear seat of my Megane a few weeks back to get a particularly awkward load in. I seem to remember there were two bolts for the seat cushion and another for the seat belt stalk. It was really very easy.
Be aware that the back seat is really surprisingly heavy. I suppose it's full of steel to give it crash protection strength.
