Commute 50miles a day, Motorway, so economical but with a bit of power for overtaking.
Small/Medium-ish, but would need to get a set of golf clubs in the boot.

Leon
Fabia VRS
Stilo 3dr
..mainly diesels
Any advice?? Other suggestions??

I'd go for the Fabia. It'll hold its value better than the others on your list - though I think a diesel Leon would hold up quite well too.
If there aren't many VRSs on the market yet, the 100 bhp TDi has plenty of oomph.
Try and get a test drive of both Fabia and Leon and see which you prefer - if you don't like either see how new a Golf TDI (130 bhp) you can get for your money. The estates don't look too van-like, are better made (in Germany) and have much better visibility at the back.

I agree the Fabia is a good choice. But realistically, will you get one for under £10k? There are not than many around second hand. And one thing is for sure....unless you want to go several years old and high mileage, a "new" (do you mean mkIV Avant?) Golf 130 will not come in under £10k.
However, I've just bought a year old '03 10k miles Seat Toledo TDi SE for £9.5k from a dealer. OK it has the older 110 engine, but will do 50+ mpg and is far better equipped than any of your other choices (climate, cruise, cd changer etc.). Toledos also seem to be considerably cheaper on the forecourt than Leons presumably because of the British buyer's dislike of the saloon car, which is to your advantage as a used buyer. As a bonus it's only insurance group 6 and recommended by HJ in the car-by-car breakdown.

Focus TDCi. Superb engine, loads around in a variety of trim levels, and reliable.
