My wife is on her sixth Mini so I'll try to help.
Two of hers were convertibles: this is the least practical version but as our other car is an Octavia estate this wasn't a priority. But her last two have been Roadsters and these have been better in that the rear seats - near to useless in the convertible - have been ditched in favour of a very reasonable boot. And there's room for a space-saver spare wheel with the Roadster, which IS a priority.
The disadvantage at least at present is that the Roadster still has the old 1.6 engine whereas the new 3-and 5-door hatchbacks have the new 1.5 3-cylinder motor, which we haven't tried in a Mini but I believe is smooth and punchy. The Cooper hatch comes with the 1.5, the One with a 1.2.
There are a lot of extras, some of which make the car worth more when you come to sell it and some that don't.
I think the Cooper is worth having: which model you go for depends to some extent on whether you need rear seats.
