my new GTi came with Bridgestone tyes 225/40 R18.

on any but German-like smooth tarmac the tyre noise in the cabin is just too high, especially on motorways

As no one else has chimed in yet, the biggest problem is finding quiet running tyres with good grip.

For what its worth, we've had good results replacing Michelin Pilotes with Vredestein Sportracs on a C2VTS (probably made your present noise seem church like peaceful) quieter smoother ride and better grip to boot.

Have Nokian ZG2 (believe now Nokian Line) on a Subaru Outback, they are rated quiet and are quiet and do everything we want, though 60 aspect will be more damped than 40's obviously.

Vred and Nokian are two of my preferred makes, also like Uniroyal but whilst their wet grip is exemplary they are not as quiet and wear as fast as those Bridgestones will have.

Have you thought of another solution though, try to work out where the noise is coming from, and i'll lay odds the majority is coming from the rear wheelarches and rear boot area...you could experiment by laying blankets...sorry, duvets, its the modern world..:-)...over likely areas to pin down where the bulk of the noise is coming from, if you find the results encouraging you might find an afternoon, preferably when it gets warmer, removing the interior trim from round the rear wheel arches and under the boot/rear seat covering reveals you have no sound insulation at all in those areas, easily remedied for around £50 worth max of self adhesive insulation pads cut to shape and applied on the bare painted metal under the trims, the difference remarkable...you might find yourself getting involved more and going inside the doors, under the main carpets (usually not needed) right round the boot etc.

I've had considerable success in soundproofing some modern cars, mainly French, there is a thread on this forum (probably 'soundproofing' as a keyword will find it) from around 2 years ago by me that gives more details if that course is of any interest to you.

You're not alone in this by the way, my friend bought a new Golf GTD on either 18 or 19" wheels, the one time i was passenger in it the road roar was frankly ridiculous for the cost of the car, but he doesn't seem bothered by the noise nor the crashing ride.

I have Michelin 'economy' tyres on my 406 which are quiet and long lasting but not I think GTi material.

There's no way that can be answered on here. The best you can hope for is peoples experiences.

Mine:

My Saab 9-3 Aero came with almost new Conti Sportcontact 3s. They were not especially noisey, but for other reasons I changed all four together for Goodyear Eagle F1 Assymetric 2s. The F1s were noticably much much quieter. They are 235/45/17s so not too far off your size. I can recommend the F1s - they are superb tyres especially in the wet (they need to be with a 270hp FWD and a commute on the Fosse Way in Warks).
