Parking ticket - should I take it to court?

I have received a parking ticket, stating that I had - "Parked after the expiry of time in a pay & display car park."

I appealed stating that I had paid £1.00 and the machine must have a log and they declined the appeal stating that the car park closes at 18.00 and that the pay and display ticket would only have printed until 18.00.

I am at a loss as to how they can have suffered "losses" in a closed car park? Also the T&C notice did not state that parking after 6pm and before 6am was not allowed - only that parking after the expiry of a ticket would contravene the rules. Is this a new parking scam?

Yes. It's a scam. Photograph the T&Cs, photocopy the notice and hang on to all material, then challenge them to take you to court for the 'penalty.' If the hours of the carpark are not clearly displayed your PCN was not only illegal, it was illegal for them to obtain the registered keeper's details from the DVLA.
