Brake failure on Ford Transit - is my garage to blame?

My Transit van recently had its 120,000 mile service and MoT by a local Ford agent. The garage fitted new rear wheel cylinders because the old ones were leaking. However, after 600 miles, my brakes failed and I crashed on a roundabout.

I’ve had the van inspected and been told the rear brake shoes had broken up after losing their friction pads. I feel the garage is at fault for this, but they deny responsibility. What should I do?

That's for a judge to decide. Tell them you are taking the case to the small claims track of the county court, then do exactly that.
