does anyone know where I can find all the info as to how to de-rate the maximium gross weight of a vehicle.......for example how to take a 10 ton truck down to 7.5 tons...? I need the info for both the practical and the paperwork aspects of it.

gives the following information about reducing a vehicle's MAM:
"If a vehicle is unlikely to be used at its potential maximum weight, it may be down-plated, so that a lower weight is specified on the plate. In the case of a heavy goods vehicle, the Vehicle and Operator Services Agency (VOSA) should be consulted because VOSA issue the ministry plate that must be carried on the vehicle. For other vehicles, the manufacturer should be contacted."

No, absolutely not. That would be expensive, fruitless and dangerous.

As mentioned above, VOSA would be the OP's first port of call.
