Just bought a 106 zest which came with one key for both doors and the ignition.Should this model have central locking ??

Depends - my wife had one of these for a while - it was a Zest and it had the sensor in a console by the rear view mirror, a small semi-spherical plastic thing is the receiver and is prone to failure through water ingress from the sunroof. What year is yours ?

There were 3 zests, i know zest3 had central, leccy windows, sunroof and cd payer.
Whether zest2 gained central during its production run i know not, but zest1 didn't.

I've just bought this 106 zest 2 but it only has one key and doesn't seem to have central locking.
I have no handbook or anything yet so can anyone give me any info about the locking on this model please?

Central locking wasn't a standard option until May 2000. Prior to that it was a £299 / £300 additional extra.
