Wash all interior surfaces with a microfibre cloth and a cleaner like diluted vinegar which dissolves grease. Wash all interior glass, plastcis and steering wheel. Take out carpets , clean throughly and use a carpet cleaner.

Use an air freshner. Put air supply to fresh air and leave blower motor on all the time.

The smell disappears after 6 months. Or so.

Smokers are evil in my view:-)

Also: Take out mats and either replace same or beat thoroughly and spray with proprietary odour neutralising wossaname. Hoover carpets and upholstry thoroughly and give 'em a good squirt too.

Or have it professionally valeted.
