Is it possible to add stability control (ESP, DSC, VSC etc) to a car which didn't originally have it specified as an extra (but on which it could have been specified)?

Anything is possible given enough time and money!
However, fitting ESP is probably not feasible. At the very least you would need to add a steering angle sensor, gyroscope, dashboard switch, ESP control unit, ABS valve unit and make changes to the ECU software and thats assuming that the ABS wheel sensors are the correct type to operate with the ESP system. The parts alone would cost thousands as spares, and then you would probably need to swap substantial parts of the wiring loom over for the extra bits.
Given it's safety-critical nature, I can't see a dealer taking it on and you may have problems with insurance in the future as you would have to declare it as a modification.

Didn't Mercedes Benz retrofit ESP to lots of A classes after the moose test debacle? I don't think the cost was the issue though - they had significant reputational and potential public liability problems.
