Any ideas how it could be modified to a fly off lever type?

A fly-off hanbrake is harder to release than the button type!In any event you still have to push the button in then pull upwards to release the mechanism.
But if you insist the rod that links the button to the pawl is moved from the top of the piece of metal that engages the pawl to the bottom or visa versa depending which way round it is. Take the lever out an have a gander. Its really simple.

A fly off hand brake requires the button pushing to lock it in the on position,pulling on the lever will then release it.If your wife,having stopped,could operate the lever and button using both hands,she would then be able to release it with her left.For hill starts she could use the lever without having to depress the button.I am sure one would be available for the Escort from suppliers of racing kit,or maybe one could be adapted from an XJS.
