Hi poor unfortunate Toledo owner here!

Recently been having problems with my Zircon on my 2001 car, stop working a week ago and now occasionally when I start the car nasty grinding sounds are generated (but not every time) I stop and restart and it disappears.

Assuming the compressor is gone, could this if it is connected to the drivebelt of the engine break the engine as well should it jam ?

With the above problem now I wish I had never brought the car ! been to the garage 4 times to fix the well know water ingress problem but so far without success ! Wish I knew about HOnest John when I brought it !

The compressor isn't engaged when cranking the engine, however, the pulley does turn. If you suspect this, then remove the belt and try turning the pulley, and then the centre hub, by hand.

This might not be the compressor - it might be a faulty electric fan bearing, a known problem on Leon/Toledo. When the bearing gets terminal, it usually blows one of the big fuses on the battery mounted fuse box (35A?). When the fan makes a grinding noise it's trying to start up. Depending on which fan is struggling, if it stops completely or is running very slowly, the aircon will stop working properly and (when stationary) the engine will overheat.
