My '97 306 meridian is stalling occasionally, usually when idling or parking. Any pointers?

Could be a sticky idle control valve if you are lucky. This can get gumed up and a good clean with carb cleaner should free it up.
However........
My daugher had this on her 98 306 1.4 It was due to a faulty coil pack, Sagem type which then blows a track on the idle control valve circuit in the ECU which results in zero output to said valve.
This was rectified by replacing coil pack getting ICU output checked from ECU at main dealers (£38), once confirmed as faulty sent ECU off to ECU Doctor for repair who turned unit around within 48 hours problem solved. coil pack and ECU repair about £270 in total which was much less than half main dealer price.

I've since spoken to a workmate who thinks that the injectors might be a bit bunged up - he's suggested a fuel additive that gives them a bit of a clean might help with the problem. Does this sound plausible?

Possible, but in my experience much (much) less likely than the idle control valve. This is easy to clean using carburettor cleaner as previously mentioned, and I'd do this before doubting injectors.

Could it be the idle stepper motor? i don't know a huge amount about this engine, but this seems to be quite common.

Replace the stepper motor. Cleaning it will just drag the problem out. Get some carb cleaner and clean the housing where the stepper motor resides then insert the new stepper motor.
