can anyone advise on wether it is essential to skim the surface of my head befor replacing it, as the haynes manual says not nesesarily merly check that it is ok and a garage i spoke to said dont put it back unless skimmed no matter what. also what is best to clean off coked up valves with?

Measure the head for warpness by placing a steel ruler vertically across the surface and see if you can see any gaps. if the head isn't warped, what's the point in going to extra expense in having it skimmed? Any "slight" inperfections, and the new head gasket should take car of it.
Most important thing to remember is to screw the head back down as indicated in the manual. Start in the middle, and work outwards.
I've always cleaned soot and coke deposits off of valves with one of those wire brushes that you fit in a drill.
