Depends who does it and what they find seized leaking or worn whilst in there or otherwise corroded or perished with the rest of the system.
Anything from 2 hours for a simple replacement/clean up lube etc, or up to a few days (up to 4 hours labour if worse case, hopefully not) whilst any discs, slave cyls, repair kits, pipes flexible/corroded, fitting kits, return springs etc needed are sourced.
If it hasn't been done before in reasonable timescale, worth getting the fluid changed at the same time, especially if the hydraulic have to be disturbed, its a 14 year old car so depending on the quality of its previous maintenance it might need a few bits more than just the pads and shoes.
