It should be up to date on software although the dealer probabaly won't have plugged in and checked. Sounds stupid but make sure it is the right car and not a lower spec.
It is most important to check over the bodywork and interior very carefully as once it has left the dealer and you spot something at home it will be difficult to prove you didn't do it. I'd take at least 10 minutes to look it over closely not just a cursory glance at each panel. Some cars are damaged on delivery and a panel respray isn't uncommon so make sure yours hasn't got overspray on other panels and all the panels colour match exactly.
Check the wheels carefully too for scuffs. Make sure it comes with the right period of VED you ordered.
Being a fussy old codger I'd also check the fluid levels and ask for a test drive before signing off to make sure everything works because if something doesn't you're in a better position not yet having accepted the car.
