Would a 185/60 tyre on a 14ins wheel swop with a 185/55 tyre on a 15ins wheel without any effect on handling or speedo etc, they both measure the same diameter, besides, my wifes 15ins alloys on her honda jazz would look better on my honda civic!.

Yes, the tyres would be Ok.
More important is to make sure the wheels are correct:
Same stud size and pitch circle diameter.
The centre hole on the wheel should locate properly on the centre of the hub. It should not be too small - the wheel would not locate correctly
It should not be too large - the wheel should not be located by the studs alone.
The wheel should have similar offset.
If these requirements are not met, be very careful.
