What documents are needed when buying a used car?

If I was buying a used car, I'd want to see the vehicle's V5C logbook first. It should match the address the vehicle is being viewed at and have the seller's name on it. I would also ask to see some form of identification from the seller that confirms they are the person on the V5C and live at the address.

If the seller claims they are selling the car on behalf of someone else (relative, friend, neighbour's dog...) then walk away from the sale (as this person will inevitably be impossible to reach if something is wrong with the vehicle).

Other important documents include the vehicle's service history and any supporting paperwork for previous work done and the sales receipt from the previous owner. The seller may ask to see your driving licence prior to the test drive. They may also ask to see some car insurance (as you may not be covered to drive the car under their policy).
