Parking ticket after overstay at retail park - what should I do?

A couple of weeks ago my partner parked at a local retail park, where you can stay for two hours for free. This week she received a parking charge letter showing pictures of her arrival and departure from the car park stating her time there was two hours and five minutes. The fine is £100 or £60 for payment within 14 days. Are we best to ignore this ridiculous demand?

There is a procedure: www.honestjohn.co.uk/faq/private-parking-penalties/

The normal tactic is to threaten you quite heavily, but I can't imaging they will take this to the small claims track of the county court because I don't believe any judge will have any sympathy with their case.
