What is the point of 8,000-mile contract limits?

How can it make sense to spend several hundred pounds per month plus a four figure sum in initial payment to finance a car with an agreed mileage of just over 150 miles per week?

Finance deals can be modified to suit different buyers. 8000 miles a year will be fine for many; if you need more, adjust the mileage.
