Adapting a low profile

I have a 2008 reg manual Ford Fiesta Titanium. I am very pleased with it. It's a great car. The car was supplied with low profile tyres. Pirelli P-ZERO Mero 205/40R17. I have had bad experiences of low profile tyres in the past under snow conditions. The tyres perform well in the dry and the wet but in snow I have lost control at low speeds and the vehicle feels skittish. I therefore wish to remove the low profile tyres and fit normal radial tyre's (Michelin or Pirelli). I feel other benefits would be lower tyre roar and improved fuel consumption. Would you agree with this action? Would you recommend keeping the low profile? What is your advice? Thanks and regards.

Buy a set of steel wheels with winter compound 185/65 tyres for the
winter. Swap back to the hard riding 205/40 R17s in summer. I drove a Fiesta equipped with them recently and thought the tyres had been over pressured. Felt like riding on roller skates.
