Yes, you can demand the V5 because the car is yours and, therefore, so is the V5. Their requirement to keep the V5 is not your issue. But you are insured, as you can insure a vehicle not registered in your name as long as you have an insured interest in the vehicle. The insurer must be advised that it is not registered in your name at the moment though.
