My car's MoT will expire when I'm on holiday - what should I do?

I will be away from 03/05/20 (too early for its MoT) until 05/06/20 (after MoT expiry date). Any way out of this conundrum?

MoT the car early or take it off the road and put it on SORN and then MoT it when you get back. Legally, you can drive a car without a valid MoT to a pre-booked MoT appointment as it is insured.
