Is it true that VAG cars turn the A/C compressor temporarily off when you put your foot all the way down?

On most cars I believe the compressor will cut out on WOT (wide open throttle).

Yup, for a maximum period of time certainly true on my V70, confirmed by an entry in the handbook.

Unless you've got a late VAG (and others) car with a permanently running compressor, in which case it throttles back to minimum displacement.

It happens on most cars which have ECU control of the engine-before that you just had reduced performance.
