Warranties are around 3-7 years with Vauxhall now 100,000 miles and no time limit to original buyer

Manufacturer's warranties are conditional upon servicing and repairs with "genuine original equipment manufacturer's part". Some warranties do also permit "parts of equal quality".

Insurers are adding clauses allowing them to repair with "parts not made by original manufacturer but of a similar standard/quality, including recycled parts". Others say just "parts not from original manufacturer including recycled parts". I can find no insurances saying "parts not from the original manufacturer provided of equal quality".

This seems to invalidate most manufacturer's warranties which means losing a valuable part of the purchase or having problems when claims arise.

If an insurance claim is made within the manufacturers new car warranty period, the simplest stance would be to have the insurance repair carried out by a manufacturer-approved or main dealer bodyshop. You should minimise the chance of non-manufacturer parts being used, but at the end of the day, there is no way you can ensure that non-manufacturer parts are used in insurance repairs.
